Ingredients
100g butter
60g sugar
2 pcs Eggs
1/3tsp baking powder
100g Self raising flour
2 drops vanilla essence
2-3 drops food colour (blue)

Directions
- Cream the butter and the sugar together until light and fluffy
- Beat in the egg one at a time, adding little of the flour as you pour in the egg
- Fold in the remaining flour
- Add the vanilla essence, mix well and half the mixture
- In one half, mix in the blue color
- Scoop half of each mixture into cupcake cases and swirl with a fork.
- Bake in a PRE-HEATED oven at 180 degrees centigrade for about 10 minutes or insert a toothpick and if it comes out smooth and not sticky take cupcakes out of oven.
